tried out the new @enzosspuntino location yesterday for a post-barre refuel & ordered a sausage, egg & cheese with added chive cream cheese toasted on an everything bagel along with an iced french vanilla oat milk latte. ⁣

review: 7/10 - bagel was a bit dry, but the sausage, etc & cheese was delish and the cream cheese was perfect. coffee was on point. & I loved the sauce that came on the side - think like a thousand-island style sauce or a comeback style sauce from @rippers_sc

i used the recipe on her website, but subbed regular brown sugar for coconut and used mini rainbow M&M’s in the monster cookie layer. ⁣

the brownie portion is completely flourless and I am not kidding, is even better than the box kind. and I mf love boxed brownies. ⁣

oh this is a GOOD ONE, friends. the BEST broccoli salad is comin in hot today. make sure to give this one a SAVE so you can enjoy it when you're ready!⁣⁣

#dEATS on this broccoli salad (aka the side you need at ya Labor Day weekend cookout 😉) 👇🏼👇🏼👇🏼⁣
⁣
- preheat oven to 425 degrees.⁣⁣
- chop one full head of broccoli until majority florets remain, then chop the florets into fine pieces.⁣⁣
- on a baking sheet, toss the broccoli with 1/2 cup pine nuts, 1 tbsp olive oil, 1 1/2 tsp dried oregano, 1 tsp kosher salt, and cracked black pepper to taste.⁣⁣
- roast for 15-20 min or until pine nuts and broccoli are browned.⁣⁣
- add to a bowl and let cool. add 3-4 oz feta cheese (I bought the feta crumbles, but cubes work too!)⁣⁣
- for the dressing, combine 2 tbsp red wine vinegar, 1 tbsp olive oil, 1/2 clove of garlic, & 1/2 tsp nutmeg. pour on the salad and mix. i ended up not using all the dressing due to the size of my head of broccoli, just FYI, so you can adjust the amount you make as necessary.⁣⁣

I ended up eating ~ the whole salad ~ the night I made it, which was a very yummy way at packing in some veggies at dinner. ⁣⁣

you can pair this with a main dish like I did (I enjoyed mine with my smashburger recipe a post back for a lighter side dish) OR add it to a Buddha bowl with some quinoa, hummus, or even grilled chicken.⁣⁣

I have been soooo excited to share this SMASHBURGER recipe with you guys - sometimes, you're just in the mood for a cheesy, melty, phat burger & this did the trick for me. It hit as the perfect Sunday comfort meal for me (and could be the star of your Labor Day weekend cookout, too 😉). I recommend serving it with a baked potato, fries, oven-roasted potatoes, or broccoli salad for a lighter side, which I will be sharing soon. Stay tuned.⁣

- brioche bun, buttered and toasted on the griddle until golden brown⁣
- romaine lettuce⁣
- tomato⁣
- red onion⁣
- avocado⁣
- special sauce ⁣
- 2 smashburger patties with cheddar cheese ⁣
⁣
for the special sauce: combine mayo, ketchup, white vinegar, relish, onion powder, salt, black pepper, cayenne - start slowly with the vinegar, but add each ingredient to your liking⁣
⁣
for the burger patties: preheat a cast iron skillet to medium high. form ground beef (a fattier kind of beef is best for these) into balls and place on the cast iron skillet. take a heavier pot or another cast iron skillet and press down onto the patties until they are flattened thin enough to your liking. salt the tops with kosher salt, then flip when the bottoms have formed a nice crust. add sliced cheddar cheese, cover for a moment until the cheese is melted, then uncover and cook until the bottom has also formed a crust.⁣

- six mint leaves ⁣
- 1 1/2 tbsp simple syrup ⁣
- one Persian cucumber, peeled and chopped (can sub a regular cucumber as well, just cut a similar sized chunk)⁣
- one tbsp lemon juice⁣
⁣
pour cucumber mixture into an ice-filled shaker and add 1/4 cup vodka. i like to add more, but you can start with 1/4 cup and add more after shaking if you like. ⁣
⁣
shake, then strain and pour into an ice-filled glass. garnish with a thinly sliced cucumber and mint leaves.⁣
⁣

It takes my breath away thinking about just how life changing this month in Hawaii has been. I’ve experienced some of the most amazing views I've ever seen, rejoiced in living in the moment, made some amazing friends, trusted my gut, was open and honest with myself and watched as blessings on blessings fell into place around me.⁣
⁣
My heart feels a little broken leaving today, but as I type this caption and breathe in the last few hours of the Maui air, I am able to find peace and happiness knowing that I'm leaving this island with memories to last a lifetime & a refreshed outlook on life. I feel recharged, re-energized, and more than excited for what's to come next.⁣
⁣
I'm going back to Columbia for a bit and I get to pack up and finally leave my college town, close that chapter, and begin the next. And the best part is, for the first time in my life, I really don't know what my next step is, and I have never been happier and more giddy to admit that. ⁣
⁣
For so long, I felt like I wanted to graduate college and move back home because it made sense - it felt stable, long-term, and like it set me up for a predictable future. But taking this opportunity to explore has made me reconsider everything and I am tingly with excitement thinking about so many other ways in which I can live out the next part of my life.⁣
⁣
Leaving Hawaii is one of the hardest goodbyes I've ever had to say, but the way these islands have inspired me to dream big makes me feel okay to close this chapter and begin the next.⁣

One of my favorite parts of the day when I’m home is my morning routine. I usually wake up, go to a workout class, clean up, make breakfast & get the day started. ⁣
⁣
Since being in Hawaii, I’ve obviously had to switch up that routine a lot, and not all mornings have looked the same. Some have been spent slowly with coffee or tea, others have consisted of journaling on the lanai, a few have included workouts and a few others were filled with yummy drinks (and beignets 🥵).⁣
⁣
A huge part for me of being on this vacation has been enjoying going with the flow and seeing where each day takes me, and that means being flexible with my morning routine - even when it comes to food and exercise, and that’s okay with me. I am looking forward to getting back on a post-vacation healthy regimen, but truly wouldn’t trade a single moment here for the world, even though I worked out a lot less and drank beer every day for a month. 😉⁣ A couple years ago, not working out every day as I usually would as part of my morning routine would have stressed me out big and I might have compensated for it through restrictive eating - but that was the old me, & I’ve learned to embrace change so much more, as life is very unpredictable and quite beautiful when you can let go and go with the flowww. 🌊

My @thehouseofroutine journal has been a good tool for me to use while being in Hawaii in order to reflect on healthy habits like drinking water and writing down affirmations while I take each day as it comes. It provides a bit of structure, even on vacation, so that my headspace is ready to goooo for the day. ⁣
